14 - 1 egg, beaten (for egg wash)

# Method:

01 - Combine warm milk, sugar, and instant dry yeast in a large bowl. Let rest for 5 minutes until foamy.
02 - Add flour, salt, melted butter, and eggs to the yeast mixture. Stir to form a soft dough, then knead for 8 to 10 minutes until smooth and elastic.
03 - Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm area for 1 hour or until doubled in size.
04 - Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
05 - Punch down the dough and divide it into 24 equal portions.
06 - Flatten each portion, add a pinch of mozzarella, parmesan, and chopped herbs, then pinch edges to seal and shape into balls.
07 - Place the balls close together in a circular wreath shape on the prepared baking sheet.
08 - Brush the dough balls with olive oil and beaten egg, then sprinkle with sesame or poppy seeds if using.
09 - Bake for 25 to 30 minutes until golden brown and cooked through.
10 - Allow to cool slightly before serving. Garnish with additional fresh herbs as desired.
